Mohammad Obaidat, DVM, Ph.D., is a Postdoctoral Fellow at the O’Neill Institute and a Research Assistant Professor in the Department of Human Science in the School of Nursing & Health Studies.
At Georgetown his research focus is studying the adaptation of E. coli O157:H7 and Salmonella sp. at the genome level to the food micro environment and how that adaptation influences pathogens to express some genes that might increase their harmful effect. He is also interested in exploring how international regulations and trade agreements affect the safety of globally traded food. Dr. Obaidat has been exposed to diverse perspectives and research areas in the pre- and post-harvest safety of meat, poultry, dairy products and fresh produce and veterinary public health.
Dr. Obaidat received a DVM from Jordan University of Science and Technology (JUST), a Master in Food Microbiology-Meat and Poultry Safety from Kansas State University, and a PhD in Food Microbiology-Fresh Produce Safety from the University of Georgia. He also received a Certificate in Codex Alimentarius from Michigan State University.
